A Scottish favourite. Empire biscuits (aka German biscuits) are biscuits filled with jam, and topped with icing, a jelly tot or glacé cherry.

- 250 g Butter or Margarine
- 1 Free-range Egg
- 500 g Plain Flour
- Strawberry or Raspberry Jam
- 200 g Icing Sugar
- Few teaspoons of boling water
- Glace Cherries/Gummy Sweeties/Icing Shapes
