Ingredients

• 1 large onion, diced
• 2 large garlic cloves, minced
• 3 tablespoons coconut oil (or olive oil)
• 2 teaspoons minced peeled fresh ginger root
• 2 cups (1/2 quart) vegetable stock
• 1 14-ounce can coconut milk
• 4 cups (2 lbs) peeled and cubed butternut squash
• 6 small handfuls spinach (1 bushel)
