One-Pot Aubergine & Mozzarella Bake – Bennett Opie
A great vegetarian one-pot recipe that makes a quick and easy family meal.
Ingredients
- 5 tbsp olive oil
- 2 large aubergines, cut into 3cm round slices
- 1 jar Opies Mini Silverskin Onions, rinsed and drained
- 3 garlic cloves, sliced
- 100ml white wine
- 400ml can chopped tomatoes
- 2 tsp dried oregano
- 1 ball mozzarella, drained
- 25g parmesan cheese
- 75g breadcrumbs
