Ingredients

  • 1.25 kg (2 lb 12 oz) beef short ribs or other stewing beef
  • 500 g (1 lb 2 oz) carrots, quartered
  • 1 tablespoon salt
  • 500 g (1 lb 2 oz) turnips, halved (or left whole if small)
  • 2 brown onions, finely chopped
  • 12 garlic cloves, finely chopped
  • 1.5 litres (52 fl oz/6 cups) cold water (enough to cover the meat by at least 5 cm/2 inches)
  • 60 g (2¼ oz) honey
  • 3 teaspoons smoked paprika
  • 1 teaspoon ground black pepper
  • 200 g (7 oz) black-eyed beans, rinsed
  • 100 g (3½ oz) whole wheat, rinsed
  • 60 ml (2 fl oz/¼ cup) olive oil
