• ⅓ cup white onion, chopped
• 2 tbsp flour
• ½ leeks, sliced
• ½ cup celery, chopped
• 1 tsp garlic powder
• 2 tsp chili flakes
• 3 lb shrimp, shelled and chopped
• 2 cups shredded Ontario artisan white cheddar
