• 9 ⅔ cups whole milk
• 4 ¾ cups heavy cream
• 3 tablespoons Crystal hot sauce
• 3 tablespoons yellow mustard
• 9 ½ cups grated extra-sharp Cheddar cheese
• 9 ½ cups grated Pepper Jack cheese
• 1 ½ tablespoons kosher salt
• 3 pounds large elbow macaroni, cooked, rinsed under cold water, and drained well
• Generous 1 cup drained, sliced pimentos
