Salsa Chicken & Rice Casserole - Jake & Amos

Ingredients

• 1 tablespoon olive oil
• 1 tablespoon butter
• 1 cup onion, diced
• 1 red pepper, diced
• 2 cloves garlic, diced
• 1 1/2 cups of Jake & Amos Black Bean and Corn Salsa
• 2 1/2 cups chicken broth
• 1 cup rice (washed, uncooked)
• 15-ounce can of black beans, drained
• 1 cup frozen corn
• 2 cups rotisserie chicken, shredded
• 1 cup cheddar cheese, shredded
