- 4 tbsp custard powder
- 1 tsp vanilla extract
- 200ml soured cream
- 200g forced rhubarb roughly chopped (see notes below)
- 50g caster sugar
- ½ small lemon zested
- ½ tbsp cornflour
- 35g unsalted butter
- 1 egg beaten
- (optional) pink gel food colouring
