• 1/2 medium onion, chopped finely
• 1 tbsp. olive oil
• 3 garlic cloves, minced
• 2 teaspoons Italian seasoning
• 3/4 cup chicken or vegetable broth
• 14-ounce can diced tomatoes, with juice
• 1 cup lite coconut milk
• 1 lb. cauliflower gnocchi or potato gnocchi
• 2 cups fresh spinach
• 1/2 cup freshly grated parmesan cheese
