Spicy Italian Chicken Suasage, Spinach and Crepe Manicotti | Food Stuff

Ingredients

• 8 oz baby bella mushrooms, finely chopped
• 5 oz baby spinach
• 3 tablespoons melted butter
• Butter, for coating the pan
• 2 (14.5 oz) cans tomatoes ( I used san marzano)
• 1 pound spicy italian chicken sausage, removed from casings
• coarse salt and freshly ground pepper
• 2 large eggs
• 1 cup flour
• 2 tablespoons fresh parsley, plus more for garnish
• 3 cloves garlic, minced
• 1/3 cup heavy cream
• 3/4 cup milk
• 1/4 cup (packed) oil packed sun dried tomatoes
• 1 tablespoon extra-virgin olive oil
• 3/4 cup provolone cheese, shredded (you can also use ricotta cheese)
• 1 pinch red pepper flakes
• 1/4 teaspoon salt
• 1/2 cup mozzarella cheese, shredded
• 1/2 cup water
