Ingredients

• 4-1/2 cups of All Purpose Flour
• 2 1/4 tsp of Instant Yeast
• 2 Tbsp of Sugar
• 1 Tbsp of Coarse Kosher Salt (use only 2 tsp if using fine salt)
• 1-1/2 cups of Warm Water
• 2 Tbsp of Melted Butter
• 4oz of shredded Mozzarella
• 4oz of shredded Gouda
• 1 Beaten Egg
• Pretzel Salt or Coarse Kosher Salt
• 10 cups of Water
• 1/3 cup of Baking Soda
• 4 Tbsp of Unsalted Butter
• 4 Tbsp of All Purpose Flour
• 1 cup of Milk
• 1/2 cup of Beer, I use Yingling
• Few Dashes of Worcestershire Sauce
• 1 Tbsp of Whole Grain Mustard
• 4oz of Sharp Cheddar, shredded fresh
• 4oz of Swiss, shredded fresh
• Salt and Pepper to taste
