Mac and Cheese with Pancetta and Wild Mushroom

Ingredients

• 1 lb pasta - shells, macaroni or other
• 6 oz pancetta - chopped
• 1 red onion - chopped
• 12 oz mushrooms - cremini, shiitake or other wild mushrooms - cleaned, sliced
• 2 garlic cloves - chopped
• 1/3 cup Kunde Chardonnay
• 6 T butter
• 1/4 cup flour
• 2 1/2 cups milk
• 2 cups sharp cheddar cheese - grated
• 1 cup Gruyere cheese - grated
• 1/2 cup parmesan cheese - grated
• 1 tsp dijon mustard
• Pinch of cayenne pepper
• 1 T thyme leaves
• Salt and freshly ground pepper (option to use truffle salt at end to flavor)
