Ingredients

• 1-2 sheets shortcrust pastry, defrosted
• ¼ + ¼ cup freshly grated parmesan
• ½ large orange kumara
• ½ eggplant
• 1 courgette
• 1 capsicum
• Olive oil
• 1 tsp dried oregano
• 1 cup (230g) creme fraiche
• ¼ cup pesto, plus extra for garnish
• Juice of ½ lemon, or 1 ½ Tbsp bottled lemon juice
• Handful of fresh rocket
• 1 Tbsp toasted almonds or pine nuts, to garnish
