• 3 leeks white part only
• sliced
• 2 cloves garlic minced
• 1 carrot chopped
• 1 rib celery chopped
• 3 tbsp (45 mL) all-purpose flour
• 8 ripe tomatoes peeled and chopped
• 2 1/2 cups (625 mL) Milk
• 3 tbsp (45 mL) tomato paste
• 1 bay leaf
• 1/2 tsp (2 mL) dried thyme or 1 tsp (5 mL) fresh thyme
• 1 1/2 tsp (7 mL) salt
• 1/4 tsp (1 mL) black pepper
• 3 green onions sliced
• 1/2 cup (125 mL) sour cream
