• 1 teaspoon salt
• ½ teaspoon fresh ground black pepper
• 1 tablespoon fresh minced garlic
• 2 pounds russet potatoes, (peeled and cut into 1-inch cubes)
• 6 cups low sodium vegetable broth
• 3 sprigs fresh thyme
• ½ cup heavy cream

• chopped fresh parsley, (for garnish)
