Carisma Vegan Shepherd’s Pie - Mitolo Family Farms

Ingredients

• LENTIL LAYER
• 1 medium brown onion (diced)
• 2 stalk celery finely chopped
• 1½ cups dry brown lentils
• 4 cups vegetable stock (I make my own using dry stock)
• 1 tsp dried thyme
• 1½ cups frozen mixed vegetable (I used carrot, corn and peas)
• salt and pepper to taste
• MASHED POTATOES
• 1 kg of potatoes of choice
• 1 TBSP vegan butter (optional)
• chopped parsley as garnish
