Ingredients

• 1 tablespoon neutral oil
• 1 lb (450 g) shaved steak or very thin sliced sirloin
• 1 small yellow onion, finely diced
• 1 green bell pepper, finely diced
• 1 cup (75 g) finely chopped mushrooms
• 1 teaspoon Worcestershire sauce
• 1/2 teaspoon garlic powder
• 3/4 teaspoon kosher salt
• 1/2 teaspoon black pepper
• 6 slices provolone cheese, chopped
• 12 egg roll wrappers
• 1 large egg, beaten with 1 tablespoon water
• 6 cups neutral oil, or enough for 2 inches in the pot
• Spicy mayo or warm cheese sauce, for serving
