Strawberry and Cream Cupcakes - Veganuary
Gluten free, soy free, nut free, yeast free. These strawberry and cream cupcakes are actually incredibly simple to make.
Ingredients
- 200g strawberries, plus a few extra to decorate
- 100ml sunflower oil
- 100g golden caster sugar
- 4 tbsp ground flaxseed mixed with 6 tbsp water
- 180g gluten free self raising flour
- 1 tsp bicarbonate of soda
- 55g dairy-free sunflower margarine
- 30ml rice milk or other dairy-free milk
- ½ tsp vanilla extract
- 250g golden icing sugar
