Ingredients

• 1 tbsp vegetable oil
• 1 onion, sliced
• 1 leek, chopped
• 1 tbsp curry powder
• 440ml/15½fl oz tin coconut milk
• 900g/2lbs assorted fish (such as salmon and haddock)
• 1 tbsp chopped fresh corriander
• 1 tbsp chopped fresh mint
• 1 tsp cayenne pepper
• 1 tbsp chopped fresh spinach
• 2 baking potatoes
• salt and freshly ground black pepper
• sweet chilli sauce, to serve
• mango chutney, to serve
