• 4 chicken breasts (approx. 1 kg / 2.2 lbs)
• 2 tablespoons olive oil
• 1 large onion , finely chopped
• 3 cloves garlic , minced
• 250 ml dry white wine (1 cup)
• 300 ml chicken stock (1 ¼ cups)
• 200 ml heavy cream (¾ cup)
• 1 bunch fresh tarragon , chopped (or 2 teaspoons dried tarragon)
• Salt and pepper , to taste
• Juice of 1 lemon
