• 1 pound beef short ribs
• 1 pound meaty veal shank
• 1 pound chicken necks, wings and backs
• 1 large onion (about ½ pound), cut in half
• 3 cups trimmed and sliced (1-inch) carrots
• 3 celery stalks cut crosswise into 4 pieces
• 6 garlic cloves
• 6 sprigs fresh Italian parsley
• 6 whole black peppercorns
