I got this recipe at my Weight Watchers meeting and adjusted it a little to my taste!
Ingredients
- 19 ounces white beans (rinsed and drained)
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- 1 tablespoon water
- 1/4 teaspoon Italian seasoning (dried herbs)
- 1/8 teaspoon salt
- 1/4 cup pesto
- 1 cup tomato, chopped
- 1 tablespoon minced chives or green onion tops
