Ingredients

• 1/4 cup (60 ml) olive oil
• 2 tablespoons (30 ml) soy sauce
• 1 tablespoon (15 ml) honey
• 1 teaspoon (5 ml) rice vinegar
• 2 cloves garlic, peeled and crushed
• Sambal oelek, to taste
• 1 1/2 lb (675 g) skinless and boneless chicken breasts, cut into strips
• 1 small shallot, finely chopped
• 1/2 teaspoon (2.5 ml) curry powder (optional)
• 1 tablespoon (15 ml) olive oil
• 2 teaspoons (10 ml) rice vinegar
• 1 cup (250 ml) coconut milk
• 1/3 cup (75 ml) peanut butter
• 1 tablespoon (15 ml) soy sauce
• Salt and pepper
• 8 large or 20 small wooden skewers, soaked in water for 30 minutes
• 1/2 lb (225 g) rice vermicelli, cooked
• Fresh cilantro, to taste
