• 500 g penne pasta
• sea salt (for the pasta water)
• 2 tbsp olive oil
• 1 tbsp butter
• 2 shallots (diced)
• 2 pinches chilli flakes (optional)
• 3 sprigs fresh thyme (leaves only)
• 2 sage leaves (finely chopped)
• 24 medium sized mushrooms
• salt and pepper
• 120 mls Moet & Chandon
• 120 mls double cream
• 70 g freshly grated vegetarian parmesan (plus more for garnish)
• fresh thyme and sage (for garnish)
