Ingredients

• 2 avocado
• 8 ounces tomatoes (grape tomatoes, this is about 1 1/2 cups)
• 2 celery ribs, sliced (this is about 1/2 cup)
• kosher salt
• 1 cup salad dressing (Derby dressing - recipe below)
• 6 ounces spinach, stemmed, washed and dried
• 3 ounces lettuce (bibb lettuce, washed and dried, this is 1 small head of lettuce)
• 1/4 cup chives, cut into 1 inch lengths
• pepper
• 4 eggs (hard cooked, peeled and sliced)
• 4 ounces Roquebort cheese (crumbled, or your favorite blue cheese)
• 8 ounces bacon (bacon, cooked, crumbled, 8 slices)
• *FOR DERBY DRESSING*
• 6 tablespoons olive oil
• 2 tablespoons vinegar (red wine vinegar, plus 1 teaspoon red wine vinegar)
• 1 lemon, juiced and zested (you should have 1 1/2 teaspoons juice and 1/2 teaspoon zest)
• 1/2 teaspoon garlic, minced
• 1/4 teaspoon sugar
• 1/2 teaspoon dijon mustard
• 1/2 teaspoon worcestershire sauce
• 1/4 teaspoon kosher salt
