Dark 'n' Stormy Chocolate Bread Pudding | Oregonian Recipes

Ingredients

• 1 2.46-ounce bar of organic dark chocolate (I use Kallari 70-percent cacao), chopped
• 1/4 cup unsalted butter, plus more to grease ramekins
• 1/2 cup whipping cream
• 1/2 cup whole milk
• 5 tablespoons brown sugar
• 1 large egg
• 4 slices of plain white bread cut on the bias into quarters
• 4 tablespoons crystallized ginger, minced
• 4 tablespoon dark rum (Gosling's Black Seal or Meyer's)
• Whipped cream, for garnish
• Zest of one lime, for garnish
