Ingredients

• 400 g Penne pasta
• 2 tbsp Olive oil
• 2 Leeks, white and light green parts only, thinly sliced
• 1 Garlic clove, minced
• 30 g Unsalted butter
• 250 ml Heavy cream
• 150 ml Whole milk
• 200 g Gorgonzola cheese, crumbled
• 1/4 tsp Ground nutmeg
• 50 g Grated Pecorino cheese
• 150 g Fresh spinach, roughly chopped
• Salt and pepper to taste
