Ingredients

• 8 tbsp (1 stick) unsalted butter
• 1 c scant all-purpose flour or quick-mixing flour, such as Wondra
• 2 lb unpeeled potatoes, preferably Yukon Golds
• Kosher salt
• Freshly ground black pepper
• 1 c whole milk
• 2 egg yolks
• 2-4 tbsp unsalted butter
• 2 ½ lb fish fillets (cod, salmon, hake, etc., or a mix of a few kinds)
• Freshly ground black peppers
• 1 sm onion, chopped
• 1 tbsp butter
• 8 oz mushrooms, sliced
• 2 c whole milk
• 1 bay leaf
• 2-3 tbsp heavy cream (optional)
• 1 tsp chopped thyme leaves
• 2 tbsp chopped parsley
• 1 c frozen peas
