• 125 ml chopped peameal bacon
• 30 ml olive oil, divided
• 2 ml pepper
• 1 ml salt
• 1 ml ground nutmeg
• 4 heirloom tomatoes, cut into wedges
• 1 garlic clove, minced
• 15 ml chopped fresh thyme leaves
• 4 eggs
