Ingredients

• 2 tablespoons olive oil
• 1 large onion – diced
• 3 stalks Olivia’s Organics Celery – diced
• 1 fennel bulb – diced
• 2 cloves garlic – minced
• 3 (15.5 oz.) cans cannellini beans – rinsed and drained
• 6 cups chicken broth
• Salt and pepper to taste
• 2 teaspoons fresh thyme (or 1 teaspoon dried thyme)
• 1/2 cup freshly grated Parmesan cheese
• Croutons
• White truffle oil
