Red Beans and Rice with Avocado - California Avocados
This recipe for red beans and rice is made without the traditional sausage so that it could be lighter and healthier. Adding fresh California Avocado completes the dish!
Ingredients
- 1 Tbsp. olive oil
- 1 large red onion, chopped
- 1 green bell pepper, stem and seeds removed, finely diced
- 1 stalk celery, finely sliced
- 3 large cloves garlic, minced
- 2 tsp. dried thyme
- 1 tsp. dried oregano
- 1 large bay leaf
- 1 tsp. fine grain sea salt
- ¼ tsp. freshly ground black pepper
- ¼ tsp. cayenne pepper, to taste
- 2 (15 oz.) cans light red kidney beans, rinsed and drained
- 1 ½ cups unsalted vegetable broth
- 1 Tbsp. apple cider vinegar
- 2 tsp. liquid smoke (optional)
- 4 cups warm, steamed white long grain rice
- 2 ripe, Fresh California Avocados, seeded, peeled, and cut into chunks
- Fresh cilantro leaves, to garnish
