Colourful Summer Salad for Boxing Day | Boursin Cheese

Ingredients

• 4 tbsp of good quality olive oil
• 2 tbsp of lemon juice
• Salt and pepper
• 150g of Boursin Garlic & Herb Cheese
• 1 radish
• 1 beetroot
• 2 yellow tomatoes
• 2 red tomatoes
• A few slices of cucumber
• A few slices of watermelon
• 2 small handfuls of spinach
• A few sprigs of chives
• 2 tbsp of a salad seed mix (such as poppy, seasame, flaxseeds)
