Maple Pinon Muffins – Designs for Life

Ingredients

• 1 1/4 cups unbleached white flour
• 1 cup of blue cornmeal
• 1 tsp. cinnamon
• 4 tsp. baking powder
• 1/2 tsp salt
• 1 cup coarsely ground toasted pinon nuts
• 2 extra large eggs
• 1/2 cup unsalted butter (1 stick)melted
• 1 1/4 cups of half and half, warmed
• 1 tsp vanilla
• 1 cup maple syrup
