Ingredients

• 3 pounds fresh tomatillos (husked)
• 2 serrano chilies (stemmed, and halved lenghthwise)
• 1 red onion (peeled, halved, and thinly sliced)
• 4 cloves garlic (peeled)
• ¼ cup olive oil
• 1 tablespoon ground cinnamon
• 2 whole cloves
• 2 teaspoons cumin seeds (toasted)
• 3 cups chicken stock
• 1 ½ cup roasted shelled pistachios
• 1 cup cilantro leaves
• salt (as needed)
