Ingredients

  • 2 lb. salted pigs’ tails, cut into 2-inch pieces, or substitute salt pork, cut in 2-in. cubes
  • 1 lb. dried red kidney beans
  • 2 tbsp. canola oil or pork fat
  • 1 medium yellow onion, peeled and finely chopped (1 cup)
  • 2 large garlic cloves, peeled and minced
  • Leaves from 2 sprigs fresh thyme
  • 2 white-fleshed sweet potatoes, peeled and sliced ½-in. thick
  • 1 cup all-purpose flour, plus more for kneading
  • ¼ cups white cornmeal
  • 1 tsp. sugar
  • 1 tsp. kosher salt, plus more to taste
  • 2¼ cups canned evaporated milk
  • ⅔–¾ cups dark brown sugar
  • Freshly ground black pepper
