• 7tbs Butter
• 2 Shallots finely chopped
• 2oz flour, all purpose or plain
• 1½cups full cream milk (Warmed)
• ¾ cup cream
• 2 handfuls Parsley, roughly chopped
• ½ Lemon, juiced
• Salt and pepper
• 24oz mixture of fish you like, white fish, salmon etc.
• 12-15 large shrimps or prawns, deveined, no tails.
• 3 ½lb starchy potatoes
• 6tbs Butter
• 3 egg yolks
