Bacon and eggplant Pasta

Ingredients

• 6/12 pound of bacon
• 3 medium eggplants, diced into half inch cubes
• 1 medium yellow onion, diced
• 2 teaspoons fresh thyme
• 1/2 teaspoon salt
• 1 teaspoon dried oregano
• 1 box pureed tomatoes
• 1 bag/box of dried Fettuccine or Rigatoni pasta, cooked to al dente
• 1/2 cup olive oil
• Fresh grated Parmesan Cheese
