Ingredients

• 1 tbsp of oil
• 1 onion, roughly chopped
• 600g of boneless skinless chicken thighs, cut into pieces
• 2 cloves of garlic, crushed
• 2 cm of freshly grated ginger
• 85ml of passata
• 60ml of light soy sauce
• 1 red pepper, roughly chopped
• 1 green pepper, roughly chopped
• 1 orange pepper, roughly chopped
• 3 tbsp of rice vinegar
• 1 tbsp of tomato ketchup
• 220g tin of chopped fresh pineapple
• 1 tbsp of cornflour
• Sliced spring onions to serves
