We all love potato latkes

Ingredients

• 1 lb russet potatoes
• 1 large egg
• 2 Tbsp matzo meal (or white flour or panko in a pinch)
• 2 oz yellow onion, finely chopped
• ½ tsp salt or to your taste
• Lucero Olive Oil (nu?) enough to fill the frying pan to a ½ inch depth
• Sour cream
• Apple sauce
