Ingredients

• 1 1/4 cups all-purpose flour
• 1/2 teaspoon salt
• 1 tablespoon sugar
• 1/2 cups (1 stick) unsalted butter, chilled and cut into 8 slices
• 4 – 5 tablespoons ice water
• 2 – 3 ripe tomatoes (I used tomatoes that were about 2″ across)
• Salt
• Olive oil
• 1 cup mozzarella cheese, shredded
• Black pepper
• 1/2 cup Parmesan cheese, grated
• Fresh basil, chopped coarsely
