Ingredients

  • 2 lbs ground beef (80/20 blend is recommended for optimal flavor, but you can use leaner ground beef if preferred)
  • 1 large yellow onion, peeled and finely diced
  • 4 cloves garlic, peeled and minced (or more, if you’re a garlic lover!)
  • ½ head of green cabbage, cored and cut into roughly 1-inch pieces (you can also use white cabbage or a combination of both)
  • 28 oz can of tomato sauce (choose a high-quality brand for the best flavor)
  • 28 oz can of diced tomatoes (fire-roasted diced tomatoes are highly recommended for their smoky depth)
  • 4 cups beef broth (low-sodium broth allows you to control the saltiness of the soup)
  • 1 cup water
  • 1 teaspoon ground paprika (sweet paprika is traditional, but smoked paprika adds a wonderful smoky dimension)
  • 1 teaspoon Italian seasoning (or a blend of your favorite dried herbs like oregano, basil, and thyme)
  • ½ cup uncooked long-grain white rice (rinse the rice before adding it to the soup to remove excess starch)
  • Kosher salt, to taste (start with a teaspoon and adjust according to your preference)
  • Freshly ground black pepper, to taste (a few generous grinds will enhance the overall flavor)
