• 6 cups beef broth
• 1 14.5 oz can diced tomatoes
• 1 large russet potato, diced
• 1/2 teaspoon red pepper flakes
• 1 teaspoon dried basil
• 1 bay leaf

• 3 cups fresh baby spinach, coarsely chopped
