Ingredients

• 1 pound Salt & Pepper Loose Sausage
• ½ pound Uncured Sliced Bacon
• 2 bunches Leeks; dark green leaves removed, rinsed thoroughly and chopped
• 5-6 large Yukon gold potatoes; peeled and diced ½“ pieces (5 cups)
• 6 cups chicken or pork stock
• ¾ cup heavy cream
• 2 Tbsp. butter
• 1 Tbsp. bacon grease (reserved)
• 2-3 cloves garlic, minced
• 2 bay leaves
• 4 small sprigs fresh thyme
• ½ tsp. salt
• ¼ tsp. black pepper
• 2-3 stems Parsley
• Chervil microgreens or chives for garnish (optional)
