• 1 10-oz package frozen spinach, thawed, extra liquid squeezed out with your hands
• 1 cup whole milk or half and half
• 1 small onion, chopped
• 2 tablespoons butter
• 1 cup chopped mushrooms
• 2 cups cheddar cheese, grated
• large pinch nutmeg
• Sea salt and black pepper to taste
