Jasper’s Chicken Quesadilla with Andy’s Corn • Tasty Recipes from Hen House

Ingredients

• 2 Cups Cooked chicken, shredded or diced (grilled or rotisserie works great)
• 1 Cup Andy’s sweet corn kernels (fresh or cooked from cob)
• 1/2 Red bell pepper, finely diced
• 1/4 Red onion, finely diced
• 1 Tablespoon Olive oil or butter
• 1/2 Teaspoon Chili powder
• Salt and pepper to taste
• 1 1/2 Cups Shredded cheese (cheddar, Monterey Jack, or a blend)
• 4 Large flour tortillas
• 1/4 Cup each Sour cream, salsa, & guacamole for serving
