- 1 lamb shank per person (the one I used was 400g)
- 1 tbsp olive oil
- 300ml red wine (Cabernet Sauvignon / Merlot or equivalent)
- 1 carrot
- 2 garlic cloves, crushed with a knife
- 2 sprigs of fresh rosemary leaves
- 300ml chicken stock
- 2 sprigs of fresh thyme leaves
- 1 onion
- Salt
- Pepper
- 1 tsp cornflour
- 1 tbsp tomato puree
- 2 tsp minced garlic
- 1 tsp paprika
