Eggy nests with zucchini and leeks, perfect for a quick, delicious snack! Serves 4-6.
Ingredients
- 5 eggs
- 2 tablespoons flat leaf parsley, chopped
- 1/2 cup grated Parmigiano Reggiano cheese
- 1/4 cup heavy cream
- Salt and pepper
- 2 small zucchini
- 2 tablespoons extra virgin olive oil (EVOO)
