Our pumpkin empanadas are a Taco-Time copycat recipe using a flour tortilla, pumpkin puree, and pumpkin spice for a delicious fall treat!

- ½ cup sugar
- 1 cup pumpkin puree
- 1 teaspoon vanilla
- 2 ½ teaspoons pumpkin pie spice
- 8 large flour tortillas (( 8 or 9 inch))
