Ingredients

• 1 large sweet potato, scrubbed
• 120g of sweetcorn, (defrosted, if frozen, or drained if canned)
• 1 pepper, diced
• 1 red onion, thinly sliced
• 1 small bunch of coriander, chopped
• 1 tbsp of chipotle sauce
• 2 tsp of ground cumin
• Juice of 1 lemon
• 60g of cheddar cheese, grated
• Sea salt and pepper
• 1 tbsp of olive oil
• 200g of Tenderstem broccoli, thinly sliced
• 3 tortilla wraps
