Ingredients

• 2 tbsps (30 ml) olive oil
• 1 small container yellow onion, diced
• 2 tsps (10 ml) Gourmet Garden™ Garlic Stir-In Paste
• 1 tbsp (15 ml) Gourmet Garden™ Italian Herbs Stir-In Paste
• 1/2 tsp (2 ml) crushed red pepper
• 1 1/2 cups (375 ml) mushrooms, sliced
• 1 can (398 ml) diced tomatoes
• 4 large eggs
